Avocado-Pineapple Salsa

 I whipped this up to take to a barbecue last weekend after I found out they were cooking Pork spare ribs. Mmmmmm!
I had just received my SLO Veg box and it contained some of the most beautiful avocados in the world. They were perfectly ripe inside with no blemishes or brown spots. Time to eat them up!

  • 1 avocado, diced
  • 1/2 can of pineapple tidbits, in juice
  • 1/2 red onion, chopped
  • juice of 1 lemon
  • 1 Tbs. honey
  • salt to taste
  1. Mix up the ingredients and season to taste.
  2. Serve with tortilla chips or as an accompaniment to fish or pork,
