I found a marinade for Tri-Tip roasts that I really, really like and I use it all the time. Its also good for fish or chicken, but I like it best with the beef. It calls for olive oil (but I used avocado oil), soy sauce, tequila!, cilantro, garlic,onions, cumin, lime peel and juice, salt and pepper. I put the meat in a zip lock bag and let it sit in the frig for several hours or overnight. Then you cook the meat on an oak barbecue and don't burn it!
MARINADE RECIPE:
1/2 C Lime Juice
2 tsp grated Lime Peel
1/2 C chopped fresh Cilantro
1/2 C Olive or Avocado oil
1/3 C Soy Sauce or Tamari
1/4 C Tequila
3 cloves Garlic, chopped
1 tsp. ground Cumin
1 tsp. Oregano
1/2 tsp Black Pepper
1/4 tsp Sea Salt
